Did you know Tamari is one of five common varieties of shoyu (Japanese soy sauce)? Shoyu is prepared by fermenting soybeans with a fungus (koji) and brine (moromi). Its features are: Tamari is darker than most soy sauces, contains no wheat, and has a greater umami flavour.
